Is this hosting company the kind that you can use remote desktop and put Ventrilo servers and stuff on? Or is it web only?

Those are just webhosts. If you want control of the actual server (terminal services, etc.) you want to look for "managed" or "dedicated" hosting where you get a whole machine.
